Foodie Post

So I tried to make ice cream the other night, without an ice cream maker, I might add. Mostly because I can't be arsed to buy something that I won't use except maybe once. The idea came out of the blue when I was thinking about grapefruit and ice cream and what might happen if I took two great tastes and put 'em together. Four words:

Maed

Of

Fail (almost).

Sweetened heavy cream goes a long way toward the Delicious factor, but the grapefruit skin I used in the cream extraction was sorely bitter. I still wonder if I could have used grapefruit zest. But if I try this recipe again, and you know I will, I'll use orange zest instead.

Tonight I am making chicken chili. Technically it's a white chili, but the onions have deepened to a lovely brown color in the long cooking, and the chipotles in adobo have given it more color. It's going to star in a Chili Cookoff at work tomorrow to benefit a charity. I hope it wins a prize!

What kind of grapefruit peel did you use? I'm thinking an organic ruby red grapefruit, to start, and then candy the peels before adding them. Notes of ginger and honey... it could work. :)

OOh, what an interesting thought. I may also try it with grapefruit oil instead of zest.

If you had pith (the white part) on your skin, it's going to result in a bitter taste. I prefer zest, or just concentrated juice, when using citrus fruits.

Ginger and honey would also be interesting, but I'd recommend taking care, because grapefruit isn't always a very strong player. You might consider reconstituting some powdered milk in your grapefruit juice (if that's part of what you're using) to supplement your grapefruit flavor without adding too much bitterness.

I'd also recommend trying a sherbet-y recipe (milk instead of cream) for more fruity flavor. IF that's what's you're looking for, that is.

I'll try the zest next time. I was recommended to use the whole skin and soak overnight. I"m not using grapefruit juice at all. I was informed that it would curdle my cream.
